St. Patrick used Shamrock to Explain Trinity



St. Patrick used the Shamrock to explain the concept of the holy trinity, that God was composed of three entities the Father, the Son and the Holy Spirit, yet each entity was part of the other just like the shamrock has three leaves but a single stem.

The word shamrock comes from the Irish word "seamrog" meaning "little clover".

Well I was a day late and a dollar short on posting this little tid bit, but I was exhausted yesterday. 

We have some good news and some bad news in our family. Bad News - my son and his family are moving to Salt Lake City Utah. Verizon is moving the Government and care centers to Utah. This change effects about 350 employees and they are said to pay for moving expenses, those that don't want to go will be given a call center positions or they can leave and be given a severance pay.  
Good News- my brother lives there with his four children and wife, we've all wanted to leave California including my daughter, so it's fairly possible we will all be moving there. If we can sell our house and have enough money to pay off what we owe, we are under water though then we can go, if not we will need to think about how we want to handle this move. My mom will be coming with us everyone is on board with this, we also have to sell her house. My daughter and her husband are not tied down to a house and they can live anywhere because her husband drives a truck. Luckily my son and DIL are not tied down to a house either.
We are not Mormon but we love the city of Salt Lake it's very beautiful. If it takes us awhile to get there I will miss them terribly. 
It's ironic that Steve and I have been talking about moving nearly every week, we are not happy here and think about retirement he is 57. I really can't believe that, where does the time go?? everything we had planned for our lives is lost, we essentially have to start over again and take a loss, all the experts say the housing market will not pick back up for years and we don't know when that is and are not willing to wait much longer.
Of course Steve will need a job also so that is the first thing we must do is have a job waiting for him there. 
We are planning on going to visit my brother in May. Steve will apply on line for jobs and in person in May.  I pray all the pieces will fall together quickly but we have double trouble because of my moms situation but we will manage to get through this move somehow.  
At fist I cried when my son told me but then I looked at it as an answer to prayer because I never wanted to leave my kids and we all had talked about leaving.
I will write more about this a time goes on.

The first photo he has on the crochet owl cap I made him.  He has a few of the red spots on face and chest babies get some times. Morgan had one for a few years but then it went away. Her parents worried about that I remember as does Kirsten.     


Dessert from yesterday Emerald Isle Cupcakes, they are very good made with pistachio
pudding mix and cream cheese frosting. 
The recipe was found at the gooseberry patch blog it's from their 101 cupcakes, cookies and brownie recipe book.
Here is the recipe in case that one gets deleted I will post it here.
1 3/4 cup all purpose flour
2/3 cup sugar
3 4 oz package of instant pudding mix
1 1/2 tsp baking powder
1/2 teaspoon salt
2 eggs beaten
1 1/4 cup milk
1/2 cup oil
1/2 tsp vanilla extract


I made homemade cream cheese frosting but the recipe says 16 oz container of cream cheese frosting


Green sprinkles or other candy sprinkles


In your kitchenaid combine flour, sugar, dry pudding mix, baking powder and salt. In another bowl beat in eggs, milk, oil and vanilla, add to flour mixture and mix well until throughly blended. Fill in Saint Patrick Day decorated paper liners and bake at 375 degrees fro 20 minutes or so until toothpick comes out clean.
Eat up Yum!

  1. Wow Kat!!! That could be an exciting move. You would be a tiny bit closer to me...LOL!!! HAHA!! Not much. Anyway, you have a nice house, it just might sell quicker than you think. We are having trouble selling our house, but it is a small older home and everyone is wanting new homes here. Keep posted about the move. I will try to check in on you. It is nice the whole family could possibly go!! :)

  4. Oh, Kat. I know the feeling of starting over again. After we made our stupid move and gave up EVERYTHING we are starting over again. But the difference is that you will have your family to lean on. Our families let us flounder.
    I am excited for you and Steve and I know in my heart that you will make it. Keep the faith, dear friend.
